Lotus Biscoff Cookie Cups

These would have to be one of the best things that has ever entered my mouth…

If you love Biscoff, then these are a must make! They are soft, gooey cookie cups that are filled with Biscoff, so when you bite into them you get a bit of cookie and a bit of Biscoff!

They are the most delicious little things and you literally cannot stop at one!

I have also made these filled with Nutella and they are super yummy also!

Prep Time: 15 min

Cooking Time: 13-15 min

Serves: 12


Ingredients:

  • 200g unsalted butter, chopped

  • 1 cup brown sugar

  • 3/4 cup white sugar

  • 1 TSP vanilla extract

  • 1 egg

  • 2 cups plain flour 

  • 1/4 TSP baking powder

  • 1/4 TSP bicarb soda

  • 1/4 TSP salt 

  • White choc bits - 200g 

  • 1/2 jar Biscoff Crunchy Spread 

Method: 

Preheat oven to 180c (I did 170c for fan forced)

Chop up your butter and place it in a bowl/stand-mixer bowl 

Add the sugars and beat on a medium speed for 8 mins until combined and creamy. 

If you do not have a stand mixer OR hand mixer, then melt the butter and whisk in with the sugars until combined. Give it a good stir for a few minutes. 

Add the egg and vanilla and beat for 2 mins until combined and fluffy

Sift in the flour, baking powder, bicarb soda and salt and beat until combined. 

Stir through the white choc bits

Line a muffin tray with muffin wraps so it doesn’t stick 

Spoon heaped tablespoons of cookie dough into each muffin wrap 

Press down on the cookie dough to flatten and even it out.

Bake for 13-15 mins until golden on top 

Take them out of the oven and using a spoon or something that has a round edge, lightly push a hole into the middle of each cookie

Fill with biscoff (as much as you want!) and let it set into place 

Once they cool, the biscoff will harden.

Try not to eat them all at once and enjoy!
