BBQ Chicken, Peach and Corn Salad

The ultimate summer salad!

I seriously cannot get enough of this salad in the summer time!

It is perfect for those hot nights where it is too hot to cook inside, so you throw everything onto the bbq and then whip up the rest of the salad inside and serve.

It all comes together really quickly, and all the flavours go so well together. It is a super healthy, quick easy weeknight meal which I am all about.

Serves: 2-4


Ingredients:

BBQ Corn:

  • 3 corn large corn cobs

  • 1 TBS Oil

  • 1 TSP sweet paprika

  • Salt

Chicken: 

  • 3 TBS olive oil

  • 2 TBS honey

  • Zest of 1 lime

  • 2 TSP cumin

  • 1.5 TSP sweet paprika

  • Juice of half lime

  • Pinch of salt

  • 6 chicken thighs, fat removed

Dressing:

  • Juice of 1 lime

  • 1 TBS olive oil

  • 1 TBS honey

  • Pinch of salt

  • 1 TBS lime zest

Other ingredients:

  • 4 x peaches / nectarines

  • Handful of fresh mint & parsley, finely chopped

  • Goats cheese or feta

  • 1 x bag Butter lettuce

  • Small bag Rocket

  • 4 x peaches / nectarines

Method: 

Heat the bbq to high for about 5 minutes

Mix together all ingredients for the chicken marinade and add the chicken. Let it marinate for 20 mins

Mix together the oil & sweet paprika and then brush onto the corn

Place the corn on the bbq and leave it on there for about 20 minutes turning occasionally.

Cut the peaches into small wedges and place on the bbq and cook for 1-2 minutes each side and remove

Whilst the corn is cooking (if there is room), add the chicken and cook for about 7-8 minutes each side until charred

Meanwhile, mix together the ingredients for the dressing and set aside.

Once the corn is cooked, allow to cool slightly and cut the corn off each edge

Mix together the lettuce, rocket, peaches, corn and fresh herbs. Toss with the dressing

Top with the chicken & goats cheese and enjoy!
