Brioche Prawn Rolls

My new Summer go-to recipe for entertaining! They are DELICIOUS!

Imagine this, it’s a hot summers day and you have your friends coming around for a bbq but wanted something light to start - Prawn Rolls!!!

These prawn rolls are seriously so tasty and the perfect little appetiser if you are having people around, or serve for lunch (warning - you will need more than one!)

The flavours all meld into each other and the creamy prawn mixture goes so well with the fluffy brioche buns.

Prep Time: 20 min

Refrigeration Time: 40min

Serves: 6 rolls


Ingredients:

  • 600g cooked prawns, peeled

  • 6 TBS mayonnaise

  • 1/2 TSP Tabasco

  • 1 celery stalk, finely diced

  • 2 TBS finely chopped red onion

  • 2 TBS finely chopped chives

  • Salt & pepper

  • juice of 1/2 lemon

  • 6 brioche hotdog buns

  • Butter

  • 1 baby cos/gem lettuce, washed and torn into pieces

Method: 

Cut the chopped prawns into little pieces

Add to a bowl with the chopped celery, red onion, mayo, tabasco, salt and pepper and lemon juice.

Mix until combined and then put into the fridge for 40 minutes

Meanwhile, preheat your oven to 150c

Place the buns in the oven for a few minutes just to warm through - about 3-5 mins

Butter the rolls whilst warm and place a small lettuce leaf in each

Divide the prawn mixture evenly between the 6 rolls

Serve immediately & enjoy!
