Fried Goats Cheese & Fig Salad

Fried Goats Cheese is what dreams are made of!

This recipe is the perfect salad to serve when you are entertaining, as I can guarantee your guests will be asking for the recipe!

The crispy, but soft on the inside warm goats cheese pairs perfectly with the sweet figs. Served on a bed of fresh rocket and crunchy almond flakes with a balsamic glaze - need I say more?!

Every ingredient in this salad goes so well together and is the perfect side salad!

Prep Time: 10min + 30 min freezing time

Cooking Time: 10min

Serves: 4 as a side


Ingredients:

  • 1 roll of goats cheese

  • 1/4 cup plain flour

  • 1/2 cup panko breadcrumbs

  • 2 eggs whisked

  • 4-5 figs

  • Vegetable oil for frying

  • 1 pack of rocket

  • Flaked almonds

  • Balsamic glaze

 

Method: 

Freeze the goats cheese for 30 mins prior to cutting it up

Whisk the eggs and place the flour and panko breadcrumbs in separate bowls

Cut the goats cheese into thick rounds - about 1-2cm

Toss them in the flour, and then the egg and the bread crumbs. Set aside - place in the freezer whilst the oil heats up.

Heat a shallow amount of oil in a pan over a medium/high heat

Fry the goats cheese until they are golden on each side

Toast the almonds for a few mins in a pan over a high heat until they start to brown

Meanwhile, arrange the rocket on a plate and add halved figs. Top with the almonds

Drizzle the balsamic glaze all over

Top with the goats cheese

Serve and enjoy!
