Lettuce Cups

One of my go-to weeknight healthy dinners!

This recipe is perfect when you are craving a healthy but yum dinner, it is super light but also really satisfying because it is packed with flavour!

With these, you can make them your own! This is a good base, however feel free to add what you like to it. I like to add vermicelli noodles to mine to bulk it up a bit, but you could also serve with some rice to make it more filling. If you are vegetarian, you could replace the mince with Tofu!

The options are endless!

I make these at least once a month, especially in summer. They are just a really yummy easy dinner.

Prep Time: 10 min

Cooking Time: 20 min

Serves: 2 as a filling meal, 4 as a side


Ingredients:

  • 1 small onion chopped fine

  • 2 cloves garlic, crushed

  • 500g pork mince (or chicken)

  • 1 carrot grated

  • 1 zucchini grated 

  • 2 TBS hoisin sauce

  • 1.5 TBS kecap manis

  • 1 TBS oyster sauce 

  • Sriracha to taste

  • 1 portion Vermicelli noodles, cooked as per packet instructions and cut into smaller lengths

  • 1 iceberg lettuce, pulled apart into cups

  • Spring onions, chilli, coriander and sesame seeds to garnish 

  •  

Method: 

Chop the onion and crush the garlic cloves

In a pan over a medium heat, add some oil and then add the onion and garlic. Cook for a few mins

Turn the heat up to high and add the mince, break apart and cook until browned. Reduce heat 

Add the vegetables (carrot and zucchini) and cook for a few mins, stirring every now and then 

Add the sauces in and mix until the mince is coated evenly.

Add in the cooked vermicelli noodles (optional but great!)

Chop the base of the iceberg lettuce off and then carefully break off the lettuce into cups 

Fill the cups with the mince and top with garnishes

Serve and enjoy!
