The Best Roast Chicken

Now I don’t say this lightly… this is the best roast chicken you will ever eat!

The skin is soo crispy, and then when you cut into it, the herby butter just oozes out. The chicken is so juicy and has infused with the flavours of the herb butter. My mouth is watering writing this!

This is one of my favourite dinners to cook on a Sunday night, it is so hearty and delicious.

It goes perfectly with my lemony roast potatoes, roast veges or a beautiful salad.

The juices that are left in the pan are liquid gold, I could drink them on their own. Make sure you drizzle some over the chicken when serving!

Ingredients:

  • 1 x whole chicken (1.5kg)

  • 50g butter

  • 5 sprigs thyme

  • 4 garlic cloves

  • 2 TBS chopped parsley

  • Squeeze lemon juice

  • 1 TSP salt

  • 1 cup chicken stock

  • Lemon

  • Cooking twine

  • Crispy skin:

  • 2 TBS olive oil

  • 2 TSP sea salt flakes

  • 2 TSP black pepper

Method: 

Preheat oven to 230c

Make your garlic herb butter - put butter in microwave for 10 seconds to soften (don’t melt it!), add chopped parsley, thyme leaves, salt and a squeeze of lemon juice. Mix until combined

Place your chicken breast side up with the cavity facing you. Using a dessert spoon, with the back of the spoon facing up, slowly slide it between the skin and the chicken

Push the garlic butter under the skin and smooth out until it evenly covers the surface, ensuring that you push it through to the legs as well.

Place the chicken in a baking tray breast side up. If you have any leftover herbs, stuff it in the cavity with a lemon. Tie the legs together with cooking twine

Massage the olive oil into the skin and then evenly cover the skin in sea salt flakes and pepper

Place in the oven for 20 mins at 230c (this will help the skin get super crispy)

Reduce heat to 200c and bake 1 hour until cooked through.

Reserve the liquids in the pan and pour over the chicken when you serve - it is liquid gold!
