Salmon Poke Bowl

One of my go-to hot summer night recipes!

My favourite part about this is how easily and quickly it comes together! It will be ready on the table in 15 mins max!

It is packed full of fresh and vibrant flavours and is a great recipe for a hot summer’s night.

When making this recipe, make sure you ask your local fish monger for Sashimi grade salmon. Also, the Kewpie roast sesame dressing is a MUST!

It is so light and yum! You can also add whatever you like to this to make it your own, it is really versatile!

No cooking required!

Serves: 1


Ingredients:

  • 1 piece of sashimi grade salmon

  • Ponzu sauce - or use soy and lime juice

  • Half avocado

  • 1 brown rice cup

  • Coleslaw mix

  • Pickled ginger

  • Edamame

  • Spring onion

  • Lime

  • Kewpie roasted sesame dressing

 

Method: 

Cut the sashimi up into little bite size pieces and then add some Ponzu sauce to lightly coat it. Squeeze lime juice over it right before serving

Remove the skin from the avocado and thinly slice

Assemble - place your brown rice in a bowl with the coleslaw, avocado, edamame, salmon, pickled ginger and top with the roasted sesame sauce
