Sticky Lime & Soy Pork Ribs

These super sticky lime and soy pork ribs always take me by surprise! I may go as far as saying, they are better than your traditional BBQ pork ribs…

The plum jam in this recipe, along with the lime juice and soy come together to create an incredible sweet and sour marinade for these ribs. As you get towards the end of cooking them, the sugar in the jam caramelises and turns into the yummiest, stickiest glaze! They will be a beautiful deep red colour once they are cooked, and I suggest eating them straight away!

Boiling these first tenderises the meat, ensuring that once they are baked for 1 hour they fall of the bone. They are truly something special!

Prep Time: 10 min + min. 3 hour time to marinate

Cooking Time: 30 min pre-boil & 1 hour to cook.

Ingredients:

  • 1 rack American pork ribs

  • 1 cup plum jam

  • 1 cup water

  • 2 TB0 finely grated lime rind

  • 2 TBS lime juice

  • 2 TBS soy sauce

  • 2 TSP garlic powder

  • 2 TSP onion powder

  • 1 TSP chilli flakes

  • 1 TSP ground cumin 

Method: 

Place the ribs in a large pot and cover with water 

Bring to a boil and then reduce the heat to low and simmer for 30 minutes covered 

Skim away the impurities that rise to the surface 

Mix together all other ingredients in a large bowl

Add the ribs and toss to combine 

Marinate for at least 3 hours, up to overnight. Turn them occasionally to ensure they are evenly coated in the marinade.

Preheat oven to 200c fan-forced 

Line a baking tray with foil and then baking paper 

Place the ribs, meat side down on the tray and pour over the glaze. Reserve some glaze for later

Cook for 1 hour, however every 15 minutes take out the ribs and flip the first time to meat side up. Baste with the remaining glaze and continue to baste from the glaze in the pan as it becomes sticky.

After it has been 1 hour, they are ready and should be a beautiful deep red colour!

Serve with lime wedges & enjoy!
