Pork & Prawn Wontons in Crack Sauce

The title “Crack Sauce” says it all - beware it is ADDICTIVE!

Nothing beats homemade wontons, especially when you serve it with this sauce. Everyone that you serve it to will be wowed and will be begging for more.

If I could explain this sauce to you (other than f***ing amazing!), it would be that it’s spicy, salty, tangy and crunchy. I can’t tell you how well it goes with the wontons, and would even be great tossed through some noodles. My mouth is drooling typing this out to you! The sauce will also make more than you need for this recipe, so whatever you have leftover place in the fridge and it should keep good for a few days. You could toss it through some noodles for a meal another night!

This recipe will serve 40 wontons, if you don’t need them all then pop whatever you won’t in the freezer so you have another meal on hand when you need it. Your future self will thank you!

Serves: 4 (makes 40 wontons)


Ingredients:

Dumplings:

  • 150g prawns

  • 200g Pork mince

  • 1/3 cup finely chopped garlic chives

  • 1/2 TSP White pepper

  • 1 TSP grated ginger

  • 2 TBS Soy sauce

  • 1 TSP Shaoxing Wine

  • 1 TBS oyster sauce

  • 1 TSP sesame oil

  • 1 TSP cornflour

  • 40 wonton wrappers - square 

Crack Sauce:

  • 1 TBS fresh minced garlic

  • 1 TBS fresh minced ginger

  • 3 TBS Lao Gan Ma Crunchy chilli oil

  • 1 TSP Sesame seeds

  • 1 x whites of green onion

  • 1/4 cup neutral oil and 1 TBS sesame oil heated up

  • 2 TBS soy

  • 1 TBS oyster

  • 1 TBS black vinegar

Method: 

Wontons:

Finely chop your prawns - you want to leave some chunks in there! 

Add all ingredients into a bowl mix until well combined 

Have a bowl of water ready and dip your finger into the water and run along all edges of the wonton wrapper 

Place a teaspoon of filling in the centre

Fold the wonton wrapper in half to make a triangle and push the edges together so they are tightly sealed. 

Dab one corner with water and then bring the two corners together and seal tightly. They should look like they are sitting with their legs crossed!

Bring a pot of water to a boil

Once you fill all dumplings, it is time to cook! Place in a pot of boiling water and once they float they are ready. 

Place on top of the crack sauce, garnish with black sesame seeds and spring onions & enjoy! 

Crack sauce:

In a bowl, combine minced garlic, minced ginger, crunchy chilli oil, sesame seeds and the whites of a green onion 

Heat the two oils together on the stove until it begins to smoke 

Carefully, pour the hot oil into the bowl over the other ingredients and listen to it sizzle! 

Add in the soy, oyster and black vinegar and stir. 

Set aside until you are ready to use! This sauce pairs perfectly with dumplings, but would also be great with noodles!
