Sticky Beef Short Ribs

One of my OG & absolute favourite recipes!

As soon as the weather starts to get colder, I find myself craving yummy slow cooked dinners. This recipe is just that, the beef short ribs are cooked until they literally fall off the bone before even taking them out of the pot in the most delicious sauce.

The sauce is sticky, salty, sweet and spicy, and it goes perfectly with the slow cooked beef.

I served mine with boiled rice, but a little tip is to also shred the meat, cover in sauce and then have it with steamed bao buns - sooo delicious!

This recipe does require a bit of time to cook, so make sure you schedule it in for a day when you know you will be home!

Cooking Time: 2.5 hrs

Ingredients:

  • 1-1.5kg beef short ribs, cut into smaller pieces

  • 1/2 cup soy sauce

  • 1 TBS fish sauce

  • 1 TBS rice vinegar

  • 1 TBS sweet soy

  • 1 cup brown sugar

  • 1 TSP Chinese five spice

  • Small piece of ginger, chopped

  • 3 garlic cloves, chopped

  • 1 x red chilli, chopped (remove seeds if you don’t like spice)

  • 2 x star anise

Method: 

Preheat your oven to 160c

Mix all ingredients in a large bowl and add the short ribs. Mix until coated and then let it marinate for 30 mins - a few hours.

Heat a frying pan over a high heat and add some oil.

Fry the beef short ribs until browned on each side

In a dutch oven/oven-proof pot with a lid, add the sauce from the bowl.

Add in the beef short ribs ensuring they are all sitting in the sauce.

Add 1 cup of boiling water to the pot

Place the lid on and place in the oven for 2.5 hours. Check half way to see if the liquid needs topping up - if so, add a cup of water.

Remove the short ribs and set aside.

Bring the sauce to a simmer over a high heat and let it simmer for 5-10 mins until thickened and sticky.

Serve with boiling rice and spoon the sauce over the ribs!
