Udon Noodle Stir-fry

Udon noodles are the best in stir fry as they just soak up all the sauce!

This recipe is the perfect recipe for when you want something quick and easy but so delicious!

It is the perfect noodle stir fry and you can add pretty much whatever you like to it. I use pork mince, however you could also use chicken mince.

Ingredients:

  • Pork mince 250g

  • Udon noodles

  • 2 cloves garlic minced

  • Fresh ginger, minced

  • 1 bunch bok choy

  • 1 TBS sambal oelek

  • 1/4 cup soy sauce

  • 1 TSP Chinese cooking wine 

  • 1 TSP black vinegar 

  • 1 TSP sesame oil 

  • 2 TBS brown sugar

  • 1 spring onion, chopped fine 

  • Spring onions and sesame seeds to serve 

 

Method: 

Heat a wok over a high heat and add some oil 

Add garlic and ginger and cook for 1 minute

Add pork and break up and cook until browned 

Meanwhile mix the sauce ingredients together and add the 1 chopped spring onion 

Pour boiling water over the udon noodles in a heatproof bowl and stand for 3 mins. Separate with a fork and drain 

Add noodles to the wok and pour the sauce over and toss to combine 

Add the bok-choy and cook for a few minutes until wilted

Serve topped with spring onions and sesame seeds!
